This refreshing Strawberry Coconut Mocktail is a healthy, non-alcoholic drink made with fresh strawberries, coconut milk, and lime. It’s perfect for warm weather, pregnancy-safe, Whole30, Paleo, and vegan-friendly.

Ingredients

  • 1 cup fresh strawberries, sliced
  • 1/4 cup freshly squeezed lime juice
  • 1 can (13.5 oz) full-fat coconut milk
  • 12 tablespoons honey or maple syrup (optional, to taste)
  • 1/2 cup cold sparkling water or plain water
  • Ice cubes
  • Fresh mint leaves for garnish (optional)
  • Sliced strawberries for garnish (optional)

Instructions

  1. In a blender, combine sliced strawberries, lime juice, coconut milk, and honey or maple syrup if using.
  2. Blend until smooth and creamy.
  3. Pour the mixture into two glasses over ice.
  4. Top with sparkling water or plain water.
  5. Stir gently to combine.
  6. Garnish with mint leaves and sliced strawberries if desired.
