These Strawberry Cookie Boats are a fun and easy dessert made with sugar cookie dough, cream cheese filling, and fresh strawberries. Perfect for parties or a sweet treat anytime!

Ingredients

  • 1 package refrigerated sugar cookie dough
  • 4 oz cream cheese, softened
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Spray a mini muffin tin with nonstick cooking spray.
  3. Divide sugar cookie dough into 12 equal portions and press each into the muffin tin, shaping a small bowl or cup shape.
  4. Bake for 10-12 minutes or until the edges are golden brown.
  5. Remove from the oven and use the back of a spoon to press down the center of each cookie cup to maintain the bowl shape.
  6. Cool completely before removing from the tin.
  7. In a bowl, mix the cream cheese, powdered sugar, and vanilla extract until smooth.
  8. Spoon the cream cheese filling into the cooled cookie cups.
  9. Top each cookie boat with chopped fresh strawberries.

Notes

  • Use a melon baller or teaspoon to shape the dough more evenly in the muffin tin.
  • Try adding a drizzle of melted chocolate or a mint leaf for decoration.
  • Store in the refrigerator if not serving immediately.
