Ingredients

  • For the crust:

  • ½ cup heavy cream

  • 1 cup freeze-dried strawberries, crushed
  • ½ cup butter, melted
  • ¼ cup sugar
  • 1 cup crushed graham crackers

Instructions

  • Prepare the crust:
  • Preheat your oven to 325°F (163°C).
  • In a bowl, combine graham cracker crumbs, sugar, melted butter, and crushed freeze-dried strawberries.
  • Press the mixture firmly into the bottom of a greased 9-inch springform pan.
  • Bake the crust for 10 minutes, then set it aside to cool.
  • Make the cheesecake filling:
  • Beat the softened cream cheese and sugar in a large bowl until smooth and creamy.
  • Add eggs, one at a time, mixing well after each addition.
  • Stir in the vanilla extract, sour cream, and heavy cream.
  • Fold in the strawberry puree until fully incorporated.
  • Pour the cheesecake batter onto the cooled crust.
  • Bake the cheesecake:
  • Bake at 325°F (163°C) for 50–60 minutes, or until the edges are set, and the center is slightly jiggly.
  • Turn off the oven and let the cheesecake cool in the oven for 1 hour. Then, remove it from the oven and let it cool completely on the counter.
  • Chill the cheesecake in the refrigerator for at least 4 hours or overnight for the best results.
  • Prepare the topping:
  • In a bowl, combine the crushed freeze-dried strawberries, melted butter, sugar, and graham cracker crumbs.
  • Gently sprinkle the mixture on top of the chilled cheesecake.
