Ingredients

  • 1 ½ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp strawberry jam or puree
  • 1 tbsp milk
  • ¼ cup powdered sugar (for rolling)

Instructions

  • Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • Mix Dry Ingredients:
In a small bowl, whisk together the flour, baking soda, and salt. Set aside.
  • Cream Butter and Sugar:
In a large bowl, beat the softened butter and granulated sugar until light and fluffy. This should take about 2-3 minutes.
  • Add Wet Ingredients:
Beat in the egg, vanilla extract, strawberry jam or puree, and milk until smooth.
  • Combine Wet and Dry Ingredients:
Gradually add the dry ingredients to the wet ingredients and mix until fully combined.
  • Shape the Cookies:
Scoop tablespoon-sized portions of dough and roll them into balls. Roll the balls in powdered sugar for a sugary coating. Place them on the prepared baking sheet about 2 inches apart.
  • Bake:
Bake for 8-10 minutes, or until the edges are golden and the centers are set. Don’t overbake to keep them soft and chewy.
  • Cool:
Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For extra strawberry flavor, you can add finely chopped dried strawberries to the dough.
  • Store the cookies in an airtight container at room temperature for up to a week.
