Ingredients

  • 1 lb large shrimp (peeled and deveined)
  • 1 bunch asparagus (trimmed and cut into 2-inch pieces)
  • 2 tablespoons olive oil
  • 3 tablespoons sweet chili sauce
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh ginger (minced)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon crushed red pepper flakes (optional, for extra heat)
  • Salt and pepper to taste
  • 1 tablespoon sesame seeds (for garnish)
  • Fresh cilantro (optional, for garnish)

Instructions

  • Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the asparagus and cook for about 3-4 minutes, or until tender-crisp. Remove from the skillet and set aside.
  • In the same skillet, add the remaining tablespoon of olive oil. Add the shrimp and season with salt and pepper. Cook for 2-3 minutes per side, or until the shrimp are pink and opaque.
  • Add the minced garlic and ginger to the skillet, cooking for 1 minute until fragrant.
  • Stir in the sweet chili sauce, soy sauce, rice vinegar, and sesame oil. If you’d like extra heat, add the crushed red pepper flakes.
  • Return the cooked asparagus to the skillet, tossing everything together until the shrimp and asparagus are well coated with the sauce.
  • Cook for an additional 2-3 minutes to allow the flavors to meld together.
  • Remove from heat and garnish with sesame seeds and fresh cilantro, if desired.
  • Serve immediately, either on its own or with steamed rice or noodles.
