Ingredients

  • 3 to 4 large eggs
  • Salt and freshly ground black pepper
  • 4 cups (3 ounces) tortilla chips (lightly crushed)
  • 1/2 cup pico de gallo (drained)
  • 2 scallions (sliced)
  • 2 tablespoons (1 oz) unsalted butter
  • 1 cup (3 oz) shredded Monterey Jack cheese
  • 1/2 cup crumbled cotija cheese
  • Handful fresh cilantro leaves
  • 1 avocado (peeled and sliced)
  • Hot sauce (optional)

Instructions

  1. In a medium bowl, beat the eggs with salt and pepper until fully combined.
  2. Stir in the crushed tortilla chips, pico de gallo, and sliced scallions.
  3. Heat a non-stick skillet over medium heat and melt the butter until foamy.
  4. Add the egg mixture to the skillet, stirring gently with a spatula.
  5. Cook for about 2 minutes, stirring frequently, then add the Monterey Jack cheese.
  6. Continue cooking for about 4 more minutes until the cheese is melted and the eggs are set.
  7. Transfer to a serving bowl and top with cotija cheese, cilantro, and sliced avocado.
  8. Serve immediately with hot sauce if desired.
