Texas Sheet Cake Cookies are a rich, chocolatey twist on the classic Texas sheet cake, featuring soft, brownie-like cookies topped with a fudgy chocolate frosting.

Ingredients

  • 1 cup unsalted butter
  • 1/2 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 3 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter (for frosting)
  • 1/4 cup unsweetened cocoa powder (for frosting)
  • 6 tbsp milk
  • 1 tsp vanilla extract (for frosting)
  • 3 1/2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
  2. In a medium saucepan, melt the butter over medium heat. Stir in the cocoa powder until smooth, then remove from heat and whisk in the granulated sugar.
  3. Add the eggs one at a time, mixing well after each. Stir in the vanilla extract and sour cream until smooth.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined. Chill the dough in the refrigerator for about 30 minutes.
  6. Scoop out tablespoon-sized portions of dough, roll into balls, and place on prepared baking sheets spaced about 2 inches apart.
  7. Bake for 10–12 minutes until cookies are set and slightly puffed. Let cool on the baking sheet for 5 minutes before transferring to wire racks.
  8. While cookies cool, make the frosting: In a saucepan, combine butter, cocoa powder, and milk. Heat over medium, stirring constantly until it begins to boil. Remove from heat and stir in vanilla extract.
  9. Gradually whisk in the powdered sugar until the frosting is smooth and glossy.
  10. Spoon frosting generously onto each warm cookie and let it set before serving.
