Ingredients
1 ½ lbs salmon fillet, skin removed and cut into bite-sized cubes
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon paprika
2 large eggs, beaten
1 cup panko breadcrumbs
½ cup cornstarch
Cooking spray or 2 tablespoons olive oil
½ cup mayonnaise
¼ cup sweet chili sauce
1–2 tablespoons sriracha (adjust to taste)
1 tablespoon honey
1 tablespoon lime juice (optional)
Chopped green onions and sesame seeds for garnish (optional)
Instructions
Preheat air fryer to 390°F (200°C) or oven to 400°F (200°C). Line a baking sheet with parchment paper if baking.
Pat the salmon pieces dry with paper towels. Season with salt, pepper, garlic powder, and paprika.
Place cornstarch in one bowl, beaten eggs in another, and panko breadcrumbs in a third bowl.
Coat each salmon piece in cornstarch, dip into the egg, then coat evenly with panko breadcrumbs.
Arrange salmon bites in a single layer in the air fryer basket or on the prepared baking sheet. Lightly spray with cooking spray or drizzle with olive oil.
Air fry for 8–10 minutes or bake for 12–15 minutes, flipping halfway through, until golden brown and cooked through.
In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth.
Toss the cooked salmon bites gently in the bang bang sauce or drizzle the sauce over the top.
Garnish with chopped green onions and sesame seeds if desired. Serve immediately.
Notes
For extra crispiness, avoid overcrowding the air fryer basket.
Adjust the sriracha to control the spice level.
These can also be served over rice, in tacos, or in lettuce wraps.
Store leftovers in an airtight container in the refrigerator for up to 2 days.
