The Best Fudgy Chewy Browkies  are the ultimate indulgent treat, combining a rich chocolate brownie layer with a soft chocolate chip cookie topping for a decadent dessert bar.

Ingredients

  • 115g unsalted butter (melted)
  • 200g granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 50g cocoa powder
  • 65g plain flour
  • 1/4 teaspoon salt
  • 100g dark chocolate chips (for brownie layer)
  • 115g unsalted butter (softened)
  • 100g brown sugar
  • 50g granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 150g plain flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 150g milk chocolate chips (for cookie layer)

Instructions

  1. Preheat oven to 175°C (350°F) and line an 8×8-inch (20cm) square baking pan with parchment paper.
  2. Start with the brownie layer: In a mixing bowl, whisk together melted butter and sugar. Add eggs and vanilla extract and whisk until smooth.
  3. Sift in cocoa powder, flour, and salt. Stir until just combined, then fold in dark chocolate chips.
  4. Pour brownie batter into prepared baking pan and spread evenly.
  5. For the cookie layer: In a separate bowl, cream softened butter with brown and white sugar until fluffy. Add egg and vanilla, mixing until combined.
  6. Add flour, baking soda, and salt. Stir until a soft dough forms, then fold in milk chocolate chips.
  7. Spoon dollops of cookie dough on top of brownie batter and gently spread it out without mixing the layers too much.
  8. Bake for 30-35 minutes until the top is golden and a toothpick inserted into the center comes out with a few moist crumbs.
  9. Let cool completely in the pan before slicing into squares.
