  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup unsalted butter, softened
  • ¾ cup brown sugar, packed
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup toffee bits (or chopped toffee bars)
  • ½ cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy using an electric mixer.
  4. Add the egg and vanilla extract, and mix until well combined.
  5. Gradually add the dry ingredients to the butter mixture, mixing until the dough comes together.
  6. Stir in the toffee bits and optional chopped nuts until evenly distributed.
  7. Drop rounded tablespoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are golden and the centers are set.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  10. Serve and enjoy!
