This fresh tomato salad is a vibrant, juicy side dish made with ripe tomatoes, red onions, and a tangy vinaigrette. Perfect for summer gatherings or as a refreshing accompaniment to any meal.

Ingredients

  • 6 large ripe tomatoes, cut into wedges
  • 1/2 medium red onion, thinly sliced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large mixing bowl, combine the tomato wedges and sliced red onion.
  2. In a separate small bowl, whisk together the olive oil, red wine vinegar, sugar, salt, and black pepper until well combined.
