This Tortellini Pasta Salad is a vibrant and hearty dish packed with cheese tortellini, fresh vegetables, and a zesty Italian dressing. It’s perfect for potlucks, picnics, or a light summer meal.

Ingredients

  • 20 oz cheese tortellini (fresh or frozen)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, chopped
  • 1 cup bell pepper, chopped (any color)
  • 1/2 cup red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup mozzarella pearls (or cubed mozzarella)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup Italian dressing (store-bought or homemade)
  • Salt and pepper, to taste

Instructions

  1. Cook the tortellini according to the package instructions. Drain and rinse under cold water to stop the cooking process.
  2. In a large mixing bowl, combine the cooked tortellini, cherry tomatoes, cucumber, bell pepper, red onion, black olives, mozzarella pearls, Parmesan cheese, and parsley.
  3. Pour the Italian dressing over the salad and toss everything together until evenly coated.
  4. Season with salt and pepper to taste.
  5. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes

  • You can use any kind of tortellini, including meat-filled or spinach and ricotta.
  • For extra protein, add grilled chicken or salami.
