  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1/2 cup peas
  • 1/2 cup corn
  • 1 tsp paprika
  • 1/2 tsp ground cumin

  • 1/2 tsp salt
  • 2 tbsp soy sauce
  • 1 tbsp tomato paste
  • 2 green onions, sliced

  8. Garnish with sliced green onions and serve warm.

Notes

  • You can substitute brown rice or cauliflower rice for a different texture or lower-carb option.
  • Add diced bell peppers or mushrooms for extra vegetables.
  • If you prefer a spicier dish, add chili flakes or a dash of hot sauce.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
