A classic Turkish confection, this Turkish Delight is delicately flavored with rose and lemon, offering a soft, chewy texture dusted with powdered sugar. Traditionally enjoyed with tea or as a sweet treat, it embodies the rich history of Ottoman-era desserts.

Ingredients

  • 2 cups granulated sugar
  • 1/2 cup cornstarch
  • 2 1/2 cups water, divided
  • 1/2 tsp cream of tartar
  • 1 tbsp lemon juice
  • 1 tsp rose water
  • 1/4 tsp lemon extract
  • Few drops of red food coloring (optional)
  • Powdered sugar, for dusting
  • Additional cornstarch, for dusting

Instructions

  1. In a saucepan, combine sugar, 1/2 cup water, and lemon juice. Bring to a boil, then simmer until the syrup reaches 240°F (soft-ball stage).
  2. In a separate pot, mix remaining 2 cups water with cornstarch and cream of tartar. Cook over medium heat, stirring constantly, until thick and smooth.
  3. Slowly pour the hot sugar syrup into the cornstarch mixture, stirring constantly to avoid lumps.
  4. Reduce heat to low and simmer for about 1 hour, stirring occasionally, until mixture becomes golden and jelly-like.
  5. Add rose water, lemon extract, and food coloring if using. Mix well.
  6. Pour mixture into a greased or lined 8-inch square pan. Let it sit uncovered at room temperature for 6–8 hours or overnight until fully set.
  7. Dust a surface with a mixture of powdered sugar and cornstarch. Turn out the Turkish Delight, cut into cubes, and roll each piece in the sugar-starch mixture.
  8. Store in an airtight container, layered with parchment and dusted with more sugar-starch mix to prevent sticking.
