Vegan Broccoli Chickpea Fritters

Crispy on the outside and tender inside, these vegan broccoli chickpea fritters are a flavorful and protein-packed dish perfect for any meal.

Ingredients

  • 1 10-12 oz package steamable broccoli florets
  • 1 15 oz can chickpeas
  • 2 tbsp aquafaba (liquid from the chickpeas)
  • 3 tbsp nutritional yeast
  • 1/4 cup panko breadcrumbs
  • 1/2 tsp garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Steam the broccoli florets and let them cool enough to handle. Place in a large mixing bowl.
  2. Drain the chickpeas, reserving 2 tbsp of aquafaba. Rinse the chickpeas well, then add them along with the aquafaba to the bowl.
  3. Mash the broccoli and chickpeas using a potato masher or fork until combined.
  4. Add garlic, salt, pepper, nutritional yeast, and panko breadcrumbs. Stir until well mixed.
  5. Heat oil in a skillet or griddle over medium heat until shimmering.
  6. Form the mixture into 6–7 large fritters (or 8–10 smaller ones).
  7. Cook for 4–5 minutes per side until browned and heated through.
  8. Serve warm with vegan cheese, ketchup, or sauce of choice.

Notes

  • For gluten-free, use gluten-free breadcrumbs.
  • Add spices like paprika or cumin for extra flavor.
  • Store leftovers in the refrigerator for up to 3 days.
  • Reheat in a skillet or oven to maintain crispiness.
