These homemade vegan Pop-Tarts are a healthier, dairy-free twist on the classic toaster pastry, featuring a flaky crust and customizable fruity filling.

Ingredients
1 1/2 cups spelt, white, or oat flour
1/4 tsp salt
1 tbsp sugar or unrefined sugar
1/2 cup cold vegan butter or coconut oil
3 to 4 tbsp cold water
Jam or filling of choice (such as strawberry, raspberry, blueberry, etc.)
Optional: powdered sugar and milk of choice for icing
Instructions
Preheat the oven to 350°F (175°C).
In a mixing bowl, stir together the flour, salt, and sugar.
Cut in the vegan butter or coconut oil until the mixture resembles fine crumbs.
Add water 1 tablespoon at a time, mixing until the dough forms.
Form the dough into a ball, then roll it out on a floured surface.
Cut into rectangles for the Pop-Tart shapes.
Add about 1 tsp of jam or desired filling onto half of the rectangles, leaving a border around the edges.
Top with remaining rectangles and press the edges with a fork to seal.
Place on a parchment-lined baking sheet and bake for 18–20 minutes or until lightly golden.
Let cool, then optionally top with icing made from powdered sugar and milk of choice.
Notes
You can use store-bought or homemade jam for the filling.
For icing, mix powdered sugar with a little milk or a sugar-free alternative.
Can be made gluten-free using oat flour or a gluten-free flour blend.
Store leftovers in an airtight container at room temperature or in the fridge.
