These homemade vegan Pop-Tarts are a healthier, dairy-free twist on the classic toaster pastry, featuring a flaky crust and customizable fruity filling.

Ingredients

  • 1 1/2 cups spelt, white, or oat flour
  • 1/4 tsp salt
  • 1 tbsp sugar or unrefined sugar
  • 1/2 cup cold vegan butter or coconut oil
  • 3 to 4 tbsp cold water
  • Jam or filling of choice (such as strawberry, raspberry, blueberry, etc.)
  • Optional: powdered sugar and milk of choice for icing

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, stir together the flour, salt, and sugar.
  3. Cut in the vegan butter or coconut oil until the mixture resembles fine crumbs.
  4. Add water 1 tablespoon at a time, mixing until the dough forms.
  5. Form the dough into a ball, then roll it out on a floured surface.
  6. Cut into rectangles for the Pop-Tart shapes.
  7. Add about 1 tsp of jam or desired filling onto half of the rectangles, leaving a border around the edges.
  8. Top with remaining rectangles and press the edges with a fork to seal.
  9. Place on a parchment-lined baking sheet and bake for 18–20 minutes or until lightly golden.
  10. Let cool, then optionally top with icing made from powdered sugar and milk of choice.

Notes

  • You can use store-bought or homemade jam for the filling.
  • For icing, mix powdered sugar with a little milk or a sugar-free alternative.
  • Can be made gluten-free using oat flour or a gluten-free flour blend.
  • Store leftovers in an airtight container at room temperature or in the fridge.
