Ingredients

  • Yukon Gold potatoes
  • Apple cider vinegar
  • Vegan mayonnaise
  • Shallot
  • Celery
  • Mustard (yellow or Dijon)
  • Pickled cucumber
  • Fresh dill, chives, and parsley
  • Paprika (for garnish)

Instructions

  • Boil potatoes, peel, and chop them.
