This Vegetarian One Pot Pasta is a simple, flavorful meal made with fresh vegetables and cooked entirely in one pot for easy cleanup. Perfect for busy weeknights, it delivers comforting flavors in just 25 minutes.

Ingredients

  • 8 oz pasta (penne or fusilli)
  • 2 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat until shimmering.
  2. Sauté minced garlic until fragrant, about 1 minute.
  3. Add halved cherry tomatoes and cook until they release their juices, about 5 minutes.
  4. Pour in vegetable broth and add pasta. Bring to a gentle boil, then reduce heat to a simmer.
  5. Cook for about 10 minutes, stirring occasionally, until pasta is al dente and most of the liquid is absorbed.
