Healthier than traditional deep-fried versions, these baked apple fritters are quick to prepare and irresistibly delicious.

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 3/4 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 1/2 cups peeled and diced apples (such as Granny Smith or Honeycrisp)
  • Optional: powdered sugar or glaze for topping

Instructions

  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  • In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and sugar.
  • In a separate bowl, whisk the eggs, milk, melted butter, and vanilla extract until well combined.
  • Add the wet ingredients to the dry ingredients and mix until just combined (do not overmix).
  • Fold in the diced apples evenly.
  • Scoop the batter by large spoonfuls (about 1/4 cup) onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 15–18 minutes, or until the fritters are golden brown and a toothpick comes out clean.
  • Let cool slightly, then dust with powdered sugar or drizzle with glaze, if desired. Serve warm.
