These refreshing and healthy Watermelon Fries paired with a creamy Coconut Lime Dip make the perfect summer snack. Sweet, juicy watermelon is cut into fries and served with a smooth coconut dip, creating a tropical twist that’s both fun and delicious!

Ingredients

  • For Watermelon Fries:
  • 1 medium-sized watermelon
  • 1 tablespoon lime zest (optional, for extra flavor)
  • A pinch of sea salt (optional)
  • For Coconut Lime Dip:
  • 1 cup canned coconut cream (or full-fat coconut milk)
  • 2 tablespoons lime juice
  • 1 tablespoon honey or maple syrup (optional for sweetness)
  • 1/2 teaspoon vanilla extract (optional)
  • 1 tablespoon unsweetened shredded coconut (for garnish)

Instructions

  • Prepare the Watermelon Fries:
  • Cut off both ends of the watermelon to create flat surfaces. Stand the watermelon upright on one of the cut ends.
  • Carefully slice off the rind, following the natural curve of the melon.
  • Cut the watermelon into vertical strips, then slice those into fry-like shapes (about 1-inch wide). Place the watermelon fries onto a plate and sprinkle with a pinch of salt and lime zest if desired.
  • Make the Coconut Lime Dip:
  • In a bowl, whisk together the coconut cream, lime juice, honey (if using), and vanilla extract until smooth.
  • For extra texture and flavor, stir in some shredded coconut or use it as a garnish on top of the dip.
  • Serve:
  • Arrange the watermelon fries on a serving platter, accompanied by the coconut lime dip. Serve immediately and enjoy!

Notes

  • You can refrigerate the coconut lime dip for a few hours to enhance the flavors.
  • If you prefer a sweeter dip, increase the honey or maple syrup to your liking.
  • For a fun twist, try adding a sprinkle of chili powder or Tajín on the watermelon fries for a sweet-spicy contrast.
