White Chocolate and Pistachio Blondies are the perfect combination of rich, buttery blondie bars with creamy white chocolate and crunchy pistachios. These indulgent treats are perfect for any occasion, offering a sweet and nutty twist on traditional blondies.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup white chocolate chips
  • 1/2 cup shelled pistachios, roughly chopped
  • 1/4 cup white chocolate chunks (optional, for extra chocolatey goodness)

Instructions

  1. Preheat the oven:
Preheat your oven to 350°F (175°C). Line an 8×8-inch square baking pan with parchment paper or lightly grease it.
  2. Mix the dry ingredients:
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Prepare the wet ingredients:
In a large bowl, whisk together the melted butter and brown sugar until smooth and combined. Add the egg and vanilla extract, and whisk again until fully incorporated.
  4. Combine wet and dry ingredients:
Gradually add the dry ingredients into the wet ingredients, stirring gently until just combined. Be careful not to overmix.
  5. Add the mix-ins:
Fold in the white chocolate chips, chopped pistachios, and white chocolate chunks (if using).
  6. Bake the blondies:
Pour the batter into the prepared baking pan and spread it evenly. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. The edges should be golden and slightly pulling away from the pan.
  7. Cool and slice:
Allow the blondies to cool in the pan for about 10 minutes, then transfer them to a wire rack to cool completely before cutting into squares.
  8. Serve and enjoy:
Serve these delicious White Chocolate and Pistachio Blondies with a cup of coffee or as an afternoon treat!

Notes

  • You can substitute the white chocolate chips for regular chocolate chips if you prefer a darker flavor.
  • If you want a more intense pistachio flavor, you can add more chopped pistachios or even sprinkle some on top before baking.
  • Store the blondies in an airtight container for up to 4-5 days.
