This quick and vibrant spinach pasta sauce is creamy, fresh, and packed with flavor from basil, garlic, and lemon. Ready in just 10 minutes, it’s a simple vegan meal perfect for busy weeknights.

Ingredients

  • 3 oz fresh spinach (100g)
  • Large handful basil
  • 2 cloves garlic, crushed
  • 2 tablespoons lemon juice
  • 1 cup coconut milk
  • 3 tablespoons nutritional yeast
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 7 oz pasta of choice (about 200g)

Instructions

  1. Add the spinach, basil, garlic, lemon juice, coconut milk, nutritional yeast, salt, and black pepper to a blender.
  2. Blend on high speed for about 30 seconds, or until the sauce is completely smooth. Taste and adjust seasoning if needed.
  3. Transfer the sauce to a large pan over medium heat. Simmer for 2 to 3 minutes until fragrant and slightly thickened.
  4. Add the cooked pasta to the pan and toss well to coat evenly in the sauce.
  5. Divide between two bowls and serve with extra basil, chili flakes, or vegan cheese if desired.

Notes

  • Frozen spinach can be used instead of fresh; thaw and drain excess liquid before blending.
  • Use full-fat coconut milk for a creamier sauce or light coconut milk for a lighter version.
  • This sauce is naturally light and thin but still full of flavor.
  • Gluten-free pasta works well for a gluten-free meal.
  • Best served immediately while warm and creamy.
