These simple 3-ingredient peanut butter cookies are soft, chewy, and naturally gluten free. Perfect for a quick and satisfying homemade treat.

Ingredients

  • 1 cup creamy peanut butter (no sugar added)
  • ¾ cup granulated sugar
  • 1 large egg

Instructions

  1. Preheat oven to 350°F. Line a large baking sheet with parchment paper.
  2. In a bowl, mix the peanut butter, sugar, and egg together with a spatula until smooth and creamy.
  3. Using a 1.5 tablespoon-size cookie scoop, portion 15 cookies onto the prepared baking sheet about 2 inches apart. Flatten each into a smooth round shape, then use the back of a fork to create a criss-cross pattern.
  4. Bake for 10–12 minutes, or until the cookies are golden brown.
  5. Let the cookies sit on the pan for 2 to 3 minutes, then transfer to a cooling rack to cool completely.

Notes

  • Use natural peanut butter for a less sweet, more nutty flavor.
  • If dough is sticky, chill it for 10 minutes before scooping.
  • Store cookies in an airtight container at room temperature for up to 5 days.
  • Optional: add a pinch of salt or vanilla extract for extra flavor.
