These 5-ingredient beef enchiladas are quick, easy, and delicious, featuring ground beef, chunky salsa, enchilada sauce, tortillas, and plenty of cheese. Perfect for a weeknight dinner with minimal ingredients.

Ingredients

  • 1 pound lean ground beef
  • 1 cup chunky salsa
  • 1 (10 oz) can red enchilada sauce
  • 8 (8-inch) tortillas (flour preferred)
  • 1 (8 oz) package Borden® Cheese Thick Cut Shredded Four Cheese Mexican (about 2 cups)

Instructions

  • Preheat the oven to 350°F. Lightly spray a 9×13-inch baking dish.
  • Brown ground beef in a skillet over medium-high heat. Drain excess fat. Stir in salsa and heat through.
  • Pour half of the enchilada sauce into the prepared dish.
  • Warm tortillas, fill each with meat mixture and cheese, roll them up, and place in the dish seam-side down.
  • Pour remaining sauce over enchiladas, top with cheese, and cover with foil.
  • Bake for 30-35 minutes.

Notes

Use flour tortillas for a softer texture or corn for a more traditional taste.
