Ingredients
1 cup unsalted butter (softened to room temperature)
3 cups powdered sugar
1 tsp pure vanilla extract
2 tsp peppermint extract
2 tsp milk or cream (plus extra if needed)
2–3 drops green food coloring (optional)
Instructions
Whisk the softened butter and powdered sugar together in a stand mixer or with a hand mixer. Start on low speed for about 1 minute, then increase to medium speed and beat for another minute until light and fluffy. Scrape down the bowl.
Add the vanilla extract, peppermint extract, milk or cream, and optional green food coloring. Whip on medium-high speed for 1 to 2 minutes until smooth and fluffy.
Check the consistency. For a lighter, more spreadable frosting, mix in additional milk 1 teaspoon at a time. For a firmer piping consistency, add extra powdered sugar 1/4 cup at a time.
Swirl or pipe the mint buttercream over your favorite cupcakes or cakes and serve.
Notes
Make sure the butter is softened to room temperature for the smoothest frosting.
