Ingredients
1 egg
3/4 cup coconut sugar
1/2 cup Greek yogurt
1/2 cup unsweetened applesauce
1 teaspoon vanilla extract
1 teaspoon almond extract
2 cups almond flour
2 tablespoons vanilla protein powder
1 teaspoon baking powder
Optional – 1 tablespoon sprinkles
Instructions
Preheat oven to 350 degrees F.
Mix the egg, coconut sugar, Greek yogurt, applesauce, vanilla extract, and almond extract in a large bowl until fully combined.
Stir in the almond flour, protein powder, and baking powder until fully combined.
Spread the batter evenly into an 8×8-inch parchment-lined pan.
If using sprinkles, spread them evenly over the batter and gently press them into the surface so they stick.
Bake for 20 minutes.
Remove the bars from the oven and allow them to cool for 10 minutes. Use the parchment paper to lift the bars from the pan, then cut into 12 pieces and serve.
Notes
Sprinkles are optional and can be omitted.
Allow the bars to cool before cutting for cleaner slices.
