Soft yeast buns filled with creamy cheesecake and spiced apples, finished with a buttery crumble topping and sweet vanilla glaze. These bakery-style treats are perfect for breakfast or dessert.

Ingredients

  • ¾ cup 180 ml warm milk
  • 2¼ teaspoons 1 packet active dry yeast
  • 3 tablespoons granulated sugar
  • 2½ cups 315 g all-purpose flour
  • ½ teaspoon salt
  • 1 large egg
  • ¼ cup 57 g unsalted butter, softened
  • 6 oz 170 g cream cheese, softened
  • ¼ cup 30 g powdered sugar
  • 1 egg yolk
  • ½ teaspoon vanilla extract
  • 2 medium apples (peeled and diced)
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • Pinch of nutmeg
  • 1 teaspoon cornstarch
  • 1 tablespoon unsalted butter
  • ¼ cup 30 g all-purpose flour
  • 2 tablespoons brown sugar
  • 2 tablespoons cold butter (diced)
  • ½ cup 60 g powdered sugar
  • 12 tablespoons milk
  • ¼ teaspoon vanilla extract

Instructions

  1. Combine warm milk, yeast, and granulated sugar, then prepare the dough with flour, salt, egg, and softened butter. Let the dough rise until doubled in size.
  2. Prepare the apple topping by cooking diced apples with brown sugar, cinnamon, nutmeg, cornstarch, and butter. Prepare the cheesecake filling with cream cheese, powdered sugar, egg yolk, and vanilla. Cool the fillings.
  3. Prepare the crumble by mixing flour, brown sugar, and cold diced butter until crumbly.
  4. Divide the dough into portions, shape into rounds, and press centers to create spaces for filling.
  5. Fill each bun with cheesecake filling and apple topping, then add the crumble topping.
  6. Let the buns rise again, then bake at 350°F for 20–25 minutes until golden.
  7. Mix powdered sugar, milk, and vanilla to make the glaze. Drizzle over the buns and serve warm or cooled.
