Unsalted butter
Granulated sugar
Large eggs
Vanilla extract

Granulated sugar, for the topping
Ground cinnamon, for the topping
Instructions
Preheat the oven and grease and line a loaf pan with parchment paper.
Reduce the apple cider in a saucepan until its flavor is concentrated, then set aside to cool slightly.
Whisk together the flour, baking powder, salt, nutmeg, and cinnamon in a bowl.
Cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla.
Add the dry ingredients to the butter mixture, alternating with the reduced apple cider, and mix just until combined.
Transfer the batter to the prepared loaf pan and smooth the top.
Bake until the loaf is risen, golden, and a toothpick inserted in the center comes out without wet batter.
Allow the cake to cool briefly before removing it from the pan.
Brush the warm loaf with melted butter, then generously coat it with cinnamon sugar to create the apple cider doughnut-style finish.
Let cool before slicing and serving.
Notes
Reducing the cider concentrates the apple flavor without adding excessive liquid to the batter.
Avoid overmixing after adding the flour to keep the loaf tender.
For the best doughnut-style coating, apply the melted butter and cinnamon sugar while the loaf is still slightly warm.
Store the cooled loaf tightly covered at room temperature for a few days.
