Ingredients
1 ½ cups apple cider
2 cups all-purpose flour
1 teaspoon baking soda
¾ teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon apple pie spice
¼ teaspoon salt
½ cup unsalted butter, melted and slightly cooled
1 large egg, at room temperature
½ cup packed light or dark brown sugar
½ cup granulated sugar
1 teaspoon pure vanilla extract
½ cup granulated sugar, for topping
¾ teaspoon ground cinnamon, for topping
¼ cup unsalted butter, melted, for topping
Instructions
Pour the apple cider into a saucepan and simmer over medium heat until reduced to about ½ cup. Set aside to cool.
Preheat the oven to 350°F (177°C). Spray a 12-count muffin pan with nonstick spray or line with muffin liners.
Whisk the flour, baking soda, baking powder, cinnamon, apple pie spice, and salt together in a large bowl.
In a separate bowl, whisk the melted butter, egg, brown sugar, granulated sugar, vanilla extract, and reduced apple cider until combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid overmixing.
Divide the batter evenly among the prepared muffin cups.
Bake until the muffins are set and a toothpick inserted into the center comes out clean, about 18 to 22 minutes.
Allow the muffins to cool briefly in the pan before transferring them to a wire rack.
For the topping, combine the granulated sugar and cinnamon in a small bowl. Brush the warm muffins with melted butter, then dip or roll them in the cinnamon-sugar mixture.
