A warm and comforting French toast bake filled with tender Granny Smith apples, cinnamon, brown sugar, and maple syrup. Serve with powdered sugar and whipped cream for a sweet breakfast or brunch.

Ingredients

  • nonstick cooking spray, for greasing
  • 12 oz day-old French bread
  • 2 large Granny Smith apples, peeled
  • 1 cup brown sugar
  • 2 teaspoons cornstarch
  • 6 large eggs
  • 2 cups milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ cup maple syrup
  • powdered sugar, for serving
  • whipped cream, for serving

Instructions

  1. Preheat the oven to 350°F (180°C). Grease a 9 x 13-inch baking dish with nonstick cooking spray.
  2. Cut the French bread into 1-inch (2 ½ cm) cubes.
  3. Chop the peeled apples into bite-size pieces.
  4. In a large bowl, toss together the bread cubes, apples, brown sugar, and cornstarch.
  5. In a medium bowl, whisk together the eggs, milk, vanilla extract, and cinnamon.
  6. Pour the egg mixture over the bread and apple mixture and toss until evenly coated.
  7. Transfer the mixture to the prepared baking dish and drizzle the maple syrup evenly over the top.
  8. Bake for 45 minutes, or until the French toast bake is set and golden brown.
  9. Serve warm with a dusting of powdered sugar and dollops of whipped cream.

Notes

  • Day-old French bread works best because it absorbs the custard without becoming overly soft.
  • Granny Smith apples provide a tart contrast to the sweet brown sugar and maple syrup.
  • Store leftovers covered in the refrigerator and reheat before serving.
