These Apple Peanut Butter French Toast Roll-Ups are a fun and delicious twist on classic French toast. Stuffed with creamy peanut butter and sweet cinnamon apples, then coated in a golden, buttery crust, they make the perfect breakfast or snack. Quick to prepare and irresistibly tasty!

Ingredients

  • 6 slices of bread (white or whole wheat)
  • 1 apple, peeled, cored, and finely chopped
  • 2 tbsp peanut butter
  • 1 tbsp sugar
  • ½ tsp cinnamon
  • 1 egg
  • ¼ cup milk
  • ½ tsp vanilla extract
  • 1 tbsp butter (for cooking)
  • ¼ cup granulated sugar (for coating, optional)
  • ½ tsp cinnamon (for coating, optional)

Instructions

  • In a small pan over medium heat, cook the chopped apple with 1 tbsp sugar and ½ tsp cinnamon until softened (about 3-4 minutes). Set aside to cool.
  • Trim the crusts off each bread slice and flatten them slightly with a rolling pin.
  • Spread a thin layer of peanut butter on each slice of bread.
  • Spoon a small amount of the cooked apple mixture onto one end of each bread slice and roll it up tightly.
  • In a shallow bowl, whisk together the egg, milk, and vanilla extract.
  • Heat butter in a pan over medium heat. Dip each roll-up into the egg mixture, coating all sides, and place in the pan.
  • Cook until golden brown on all sides, about 2-3 minutes per side.
  • Optional: Mix ¼ cup sugar with ½ tsp cinnamon and roll the warm French toast roll-ups in the mixture for extra sweetness.
