550 g (4 and 1/2 cups-4 medium apples) chopped cubed apples
30 g (2 tablespoons) granulated sugar
25 g (2 tablespoons and 1 teaspoon) all-purpose flour
2 teaspoons lemon juice
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
280 g (2 cups) all-purpose flour (dip and sweep)
185 g (3/4 cup and 1 tablespoon) unsalted butter, cut into small cubes, cold
105 g (1/2 cup) granulated sugar
1 teaspoon ground cinnamon
Instructions
Preheat the oven to 350°F (177°C). Grease an 8-inch (20 cm) square oven-proof dish and line the bottom and sides with parchment paper, leaving about 2 inches (5 cm) of overhang on each side.
Peel, core, and cut the apples into small pieces. Place them in a medium bowl and toss with the lemon juice, 30 g granulated sugar, 25 g flour, 1 teaspoon cinnamon, and nutmeg. Set aside.
For the crust and crumble, combine 280 g flour, 105 g granulated sugar, and 1 teaspoon cinnamon in a large bowl.
Add the cold cubed butter and toss to coat it with the flour mixture. Cut the butter into the dry ingredients using two forks or a pastry blender, or rub it in with your fingertips, until a crumbly dough forms.
Spread about 2/3 of the crust mixture evenly into the prepared dish. Press it down with a spoon or your hand. Lightly flour the spoon if the mixture sticks.
Spread the apple filling evenly over the crust. Sprinkle the remaining 1/3 of the dough over the apples, squeezing some of the mixture together by hand to create larger crumbles.
Bake for about 55 minutes, until the top is golden brown and the crumbles are crisp.
Let the bars cool completely before slicing. Once cool, use the parchment overhang to lift them from the dish and cut into 16 pieces.
Notes
For neat slices, allow the bars to cool completely before cutting.
After cooling at room temperature for 1 to 1.5 hours, the bars can be chilled briefly to help them firm up faster.
Store in an airtight container in the refrigerator for up to 4 days.
