These Apple Pie Bars combine a buttery crust, tender cinnamon-spiced apples, and a golden crumb topping for an easy dessert that’s perfect for sharing. Enjoy them warm or chilled with vanilla ice cream or whipped cream.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup unsalted butter, melted or softened
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 6 cups apples (Granny Smith, Honeycrisp, or a combination), peeled and sliced
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats (optional, for crumb topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking pan with parchment paper or lightly grease it.
  2. Combine the flour, granulated sugar, brown sugar, butter, salt, and baking powder until the mixture is crumbly.
  3. Press about two-thirds of the crumb mixture firmly into the prepared pan to form the crust.
  4. Bake the crust until lightly golden, about 15 minutes.
  5. Meanwhile, toss the sliced apples with cinnamon, nutmeg, lemon juice, vanilla extract, and any remaining sugar as desired.
  6. Spread the apple filling evenly over the baked crust.
  7. Mix the rolled oats into the remaining crumb mixture if using, then sprinkle evenly over the apples.
  8. Bake for 35 to 40 minutes, or until the topping is golden brown and the apples are tender.
  9. Cool completely before slicing into bars for clean edges.
  10. Serve as is or with vanilla ice cream or whipped cream.

Notes

  • Add chopped pecans or walnuts to the topping for extra crunch.
  • Stir caramel sauce into the apple filling for a richer flavor.
  • Apple pie spice can replace the cinnamon and nutmeg.
