Ingredients
2 pie crusts
24 oz cream cheese
1 cup sugar
1 cup sour cream
½ teaspoon vanilla extract
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
3 eggs
3 medium apples, peeled, cored and cubed
1 cup water
⅓ cup sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
2 tablespoons cornstarch
Instructions
Preheat oven to 300°F (150°C).
Line a springform pan with one pie crust, pressing it around the sides of the pan until smooth.
In a medium bowl, beat the cream cheese, 1 cup sugar, vanilla, ½ teaspoon cinnamon, and ½ teaspoon nutmeg until smooth.
Add the sour cream and mix well. Add the eggs one at a time, whisking until smooth after each addition.
Pour the cheesecake mixture into the prepared springform pan and bake for 1 hour and 15 minutes.
Turn off the oven and let the cheesecake cool inside for 1 hour without opening the oven door.
Increase the oven temperature to 425°F (220°C).
In a saucepan over medium-low heat, combine the apples, ⅓ cup sugar, 1 teaspoon cinnamon, ½ teaspoon nutmeg, cornstarch, and water. Cook, stirring occasionally, until the apples are soft, about 10 minutes. Remove from the heat and let cool.
Spread the cooled apple pie filling evenly over the cheesecake.
Cut the remaining pie crust into ¼-inch (6 mm) strips and arrange them in a lattice pattern over the apple filling.
Brush the lattice crust with egg wash made from a small amount of the beaten egg mixture or an additional egg if available.
Bake for 25 minutes, or until the lattice crust is golden brown.
Let cool, then chill until completely set before slicing and serving.

Allow the apple filling to cool before spreading it over the cheesecake.
For clean slices, chill the finished cheesecake thoroughly before cutting.
