These apple spiced vegan blondie bars are soft, chewy, and packed with warm autumn flavors from cinnamon and fresh apples. They make a comforting plant-based treat for snacks or dessert.

Ingredients

  • 1 cup almond flour
  • 1 cup oat flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup coconut sugar
  • 1/2 cup almond butter
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup almond milk
  • 1 cup diced apple

Instructions

  1. Preheat the oven and line a baking pan with parchment paper.
  2. In a bowl, mix the almond flour, oat flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, combine coconut sugar, almond butter, maple syrup, vanilla extract, and almond milk until smooth.
  4. Add the wet ingredients to the dry ingredients and stir until combined.
  5. Fold in the diced apple.
  6. Spread the batter evenly into the prepared pan.
  7. Bake until the blondies are set and lightly golden.
  8. Allow to cool before slicing into bars.

Notes

  • Store leftovers in an airtight container for several days.
  • You can use another plant-based milk if preferred.
