Ingredients
1 tablespoon ground flax seeds
2½ tablespoons hot water
1 cup (125 grams) all purpose flour
2 teaspoons baking powder
1½ teaspoons ground cinnamon
¼ teaspoon baking soda
¼ teaspoon fine sea salt
1 cup (240 mls) dairy-free milk
2 tablespoons oil of choice, plus extra for greasing the waffle iron
1 tablespoon apple cider vinegar
1 teaspoon vanilla extract
1 medium apple, peeled, cored, and chopped into small pieces
Instructions
In a small bowl, mix the ground flax seeds with the hot water and let it sit for a few minutes to thicken.
Grease and preheat the waffle iron on a medium heat setting.
In a large mixing bowl, whisk together the flour, baking powder, cinnamon, baking soda, and sea salt.
In a separate bowl or jug, combine the dairy-free milk, oil, apple cider vinegar, vanilla extract, and flax mixture. Stir well.
Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the chopped apple pieces.
Pour the batter into the preheated waffle iron according to your machine’s instructions. Cook until no steam is escaping from the sides of the waffle maker for crisp, fully cooked waffles.
Carefully remove the waffles and repeat with the remaining batter, reheating the waffle iron between batches if needed.
