Enjoy a creamy and healthy twist on the classic Italian carbonara with this Avocado Carbonara recipe. This easy, delicious pasta dish uses ripe avocado to create a rich, flavorful sauce combined with savory meat for a satisfying meal. Perfect for a quick weeknight dinner or a tasty lunch, it’s ready in under 30 minutes.

Ingredients

  • 12 oz spaghetti or your favorite pasta
  • 1 large ripe avocado
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese (optional for extra flavor)
  • 2 cloves garlic, minced
  • 4 slices of your preferred cured meat, chopped
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley or basil, chopped (for garnish)
  • Juice of half a lemon

Instructions

  1. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
  2. While pasta cooks, heat olive oil in a skillet over medium heat. Add the chopped meat and cook until crispy. Remove from heat and set aside.
  3. In a blender or food processor, combine the avocado, eggs, Parmesan cheese, garlic, lemon juice, salt, and pepper. Blend until smooth and creamy.
  4. Immediately toss the hot pasta with the avocado sauce, adding reserved pasta water a little at a time until you reach your desired creamy consistency.
  5. Stir in the crispy meat. Adjust seasoning with salt and pepper.
  6. Garnish with chopped parsley or basil and extra Parmesan if desired. Serve immediately.

Notes

  • For a vegan version, substitute eggs with silken tofu and Parmesan with nutritional yeast.
  • Make sure to toss the sauce with hot pasta quickly so the eggs cook gently and thicken the sauce without scrambling.
  • Leftovers can be stored in the fridge for up to 2 days but may thicken; add pasta water before reheating.
