A creamy, cheesy broccoli casserole with a rich mushroom sauce and a crisp buttery cracker topping. A comforting side dish that’s easy to bake for family dinners and gatherings.

Ingredients

  • 1 pound fresh broccoli, cut into florets
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 cup mayonnaise
  • 1 large egg, beaten
  • 1/4 cup chopped onion
  • 2 cups shredded sharp Cheddar cheese
  • Salt and pepper to taste
  • 1 sleeve buttery round crackers, crushed
  • 2 tablespoons butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a baking dish.
  2. Cook the broccoli until just tender, then drain well.
  3. Combine the condensed mushroom soup, mayonnaise, beaten egg, onion, and shredded Cheddar cheese in a large bowl. Season with salt and pepper.
  4. Add the cooked broccoli and stir gently until evenly coated.
  5. Transfer the mixture to the prepared baking dish and spread evenly.
  6. Combine the crushed crackers with melted butter, then sprinkle evenly over the casserole.
  7. Bake until the casserole is hot and bubbly and the topping is golden brown, about 30 minutes.
  8. Let rest briefly before serving.

Notes

  • Drain the broccoli thoroughly to prevent the casserole from becoming watery.
  • Fresh broccoli can be substituted with thawed frozen broccoli.
  • For extra flavor, reserve a little Cheddar cheese to sprinkle over the top before adding the cracker crumbs.
  • Store leftovers covered in the refrigerator and reheat until hot before serving.
