Soft and warmly spiced baked apple cider donuts made with reduced cider for concentrated apple flavor, then coated in buttery cinnamon apple spice sugar.
6 Tablespoons (85g) unsalted butter, melted, for coating
Instructions
Pour the apple cider into a small saucepan and simmer over low heat, stirring occasionally, until reduced to about 1/2 cup (120ml), about 20 minutes. Set aside to cool for 10 minutes.
Preheat the oven to 350°F (177°C). Spray a donut pan with non-stick spray and set aside.
Whisk the flour, baking soda, baking powder, cinnamon, apple pie spice, and salt together in a large bowl.
In a separate bowl, whisk the 2 Tablespoons melted butter, egg, brown sugar, 1/2 cup granulated sugar, milk, and vanilla extract together.
Pour the wet ingredients into the dry ingredients. Add the reduced apple cider and whisk until smooth and combined. The batter will be slightly thick.
Spoon or pipe the batter into the prepared donut cavities, filling each about halfway.
Bake for 10-11 minutes, or until the edges and tops are lightly browned and the donuts spring back when gently pressed.
Cool the donuts in the pan for 2 minutes, then transfer to a wire rack. Re-grease the pan as needed and bake the remaining batter.
For the coating, combine 1 cup granulated sugar, 3/4 teaspoon cinnamon, and 3/4 teaspoon apple pie spice in a medium bowl.
Once the donuts are cool enough to handle, dip both sides of each donut in the 6 Tablespoons melted butter, then generously coat in the spiced sugar mixture. Serve immediately.
Notes
Reducing the apple cider concentrates its flavor; keep any spices or solids that remain after reducing.
A large zipped-top bag with one corner snipped off makes it easy to pipe the batter into the donut pan.
Donuts are best served immediately after coating.
Store leftovers tightly covered at room temperature for up to 2 days or in the refrigerator for up to 5 days.
