Ingredients

For the Fritters:

  • ¾ cup all-purpose flour
  • ¾ cup white whole wheat flour
  • ½ cup brown sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 2 large eggs
  • ½ cup milk (or almond milk)
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter (or coconut oil)
  • 1 ½ cups diced apples (Honeycrisp or Granny Smith work great)

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  • Preheat & Prep: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour, brown sugar, baking powder, salt, cinnamon, and nutmeg.
  • Mix Wet Ingredients: In another bowl, beat the eggs, milk, vanilla extract, and melted butter.
  • Combine: Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the diced apples.
  • Shape the Fritters: Drop spoonfuls of batter onto the prepared baking sheet, shaping them into small mounds.
  • Bake: Bake for 14–16 minutes or until golden brown and cooked through.
  • Make the Glaze: While the fritters cool slightly, whisk together powdered sugar, milk, and vanilla extract.
  • Glaze & Enjoy: Drizzle the glaze over the warm fritters, let it set for a few minutes, then enjoy!

Notes

  • For extra flavor, try adding a pinch of cardamom or ginger.
  • Store leftovers in an airtight container for up to 2 days. Reheat in the oven for the best texture.
  • Swap out apples for pears for a fun variation!
