Ingredients

  • 8 tablespoons salted butter
  • 2 garlic cloves (minced)
  • 1 lemon (thinly sliced)
  • 1 pound ground chicken
  • 1 egg
  • 1/2 cup panko breadcrumbs
  • 1/2 cup parmesan cheese (grated)
  • 1/2 teaspoon each onion powder, garlic powder, and salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter (for the orzo)
  • 2 garlic cloves (minced, for the orzo)
  • 2 1/2 cups chicken broth
  • 2 cups milk
  • 1 pound orzo (about 2 1/2 cups)
  • 1/2 teaspoon salt (for the orzo)
  • 1/4 teaspoon black pepper (for the orzo)
  • 2 tablespoons lemon juice
  • 1/2 cup parmesan cheese (grated, for the orzo)
  • 2 cups baby spinach

Instructions

  1. Arrange the thinly sliced lemon in a single layer in an oven-safe skillet. Add 8 tablespoons of salted butter and 2 minced garlic cloves. Cook over medium-high heat for 2–3 minutes, until the butter melts and the garlic becomes fragrant. Remove from the heat. If your skillet is not oven-safe, transfer the lemon butter mixture to a baking dish.
  2. Preheat the oven to 400°F (200°C).
  3. In a large mixing bowl, combine the ground chicken, egg, panko breadcrumbs, 1/2 cup grated parmesan, onion powder, garlic powder, salt, and black pepper. Mix gently until just combined, avoiding overmixing to keep the meatballs tender.
  4. Shape the chicken mixture into approximately 18 meatballs, using about 2 tablespoons of mixture per meatball. Arrange the meatballs over the lemon slices and garlic butter in the prepared skillet or baking dish.
  5. Loosely cover the meatballs with aluminum foil and bake for 10 minutes. Remove the foil and continue baking for another 15 minutes, or until the meatballs are golden brown and their internal temperature reaches 165°F (74°C).
  6. While the meatballs bake, prepare the creamy orzo. Melt 2 tablespoons of butter in a large skillet or saucepan over medium-high heat. Add the remaining 2 minced garlic cloves and cook for 2–3 minutes until fragrant.
  7. Pour in the chicken broth and milk. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Bring the mixture to a boil, then reduce the heat to medium-low and stir in the orzo.
  8. Cover and simmer for approximately 10 minutes, stirring frequently to prevent sticking, until the orzo is al dente and the liquid has thickened into a creamy sauce. Stir in the lemon juice. Add a splash of extra broth or milk if the mixture becomes too thick.
  9. Stir the remaining 1/2 cup grated parmesan and baby spinach into the orzo. Continue stirring until the cheese melts and the spinach wilts.
  10. Spoon the creamy spinach orzo onto serving plates and top with the baked chicken meatballs. Drizzle with the warm lemon garlic butter from the baking dish and serve immediately.

Notes

  • Use an oven-safe skillet to prepare the lemon butter and bake the meatballs in the same pan for easier cleanup.
  • Avoid overmixing the ground chicken mixture, as this can make the meatballs dense instead of tender.
  • For food safety, cook the chicken meatballs until they reach an internal temperature of 165°F (74°C).
  • Stir the orzo frequently while simmering to prevent it from sticking to the bottom of the pan.
  • If the orzo becomes too thick, gradually add extra warm chicken broth or milk until it reaches your preferred creamy consistency.
  • Freshly grated parmesan melts more smoothly than pre-shredded cheese and creates a creamier sauce.
  • For extra citrus flavor, add a little freshly grated lemon zest to the finished orzo.
  • Baby kale can replace spinach, although it may require a slightly longer cooking time to become tender.
  • Store leftovers in an airtight container in the refrigerator for up to 3–4 days. Reheat gently with a splash of milk or broth to restore the creamy texture.
  • Serve with a crisp green salad or roasted vegetables for a complete meal.
