Ingredients
4 large ripe tomatoes, halved horizontally
1/2 cup Italian-seasoned bread crumbs
1/4 cup grated Parmesan cheese
2 tablespoons olive oil
1 teaspoon dried oregano
Salt and freshly ground black pepper, to taste
Instructions
Preheat the oven to 350°F (175°C). Lightly grease a baking dish.
Wash the tomatoes and cut them in half horizontally. Arrange the tomato halves cut-side up in the prepared baking dish.
In a small bowl, combine the bread crumbs, grated Parmesan cheese, dried oregano, salt, and black pepper.
Sprinkle the breadcrumb mixture evenly over the cut surfaces of the tomatoes.
Drizzle the olive oil over the seasoned tomatoes.
Bake in the preheated oven for 20 to 25 minutes, or until the tomatoes are tender and the topping is lightly golden.
Remove from the oven and let cool slightly before serving warm.
Notes
Choose firm, ripe tomatoes that will hold their shape during baking.
Fresh oregano can replace dried oregano; use approximately three times the amount.
For a crispier topping, broil the tomatoes for the final 1 to 2 minutes, watching carefully to prevent burning.
Use gluten-free breadcrumbs to make a gluten-free variation.
Serve alongside grilled chicken, fish, pasta, or roasted vegetables.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven until warmed through.
