Soft and naturally sweet banana oat blondie muffins with irresistibly gooey tops. A wholesome treat perfect for breakfast or snacking.

Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup oat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, mash the bananas until smooth.
  3. Add maple syrup, melted coconut oil, egg, and vanilla extract. Mix well.
  4. Stir in oat flour, baking soda, cinnamon, and salt until combined.
  5. Fold in chocolate chips.
  6. Scoop batter evenly into muffin cups, filling nearly to the top.
  7. Bake for 18–22 minutes until edges are set but centers remain soft.
  8. Allow muffins to cool slightly before serving for the best gooey texture.
