Ingredients
½ cup mashed banana (about 1 large ripe banana)
¼ cup natural peanut butter
1 large egg
2 tablespoons honey or maple syrup
⅓ cup milk of choice
½ teaspoon vanilla extract
1 cup old-fashioned rolled oats
½ teaspoon baking powder
⅛ teaspoon salt
½ teaspoon ground cinnamon
¼ cup chocolate chips
Cooking spray, for greasing
Instructions
Preheat the oven to 350°F (175°C). Line a standard muffin pan with 6 paper liners and lightly grease them with cooking spray.
Add the banana to a mixing bowl and mash well with a fork until mostly smooth. Add the egg, peanut butter, honey or maple syrup, milk, and vanilla extract. Whisk until well combined.
Add the rolled oats, baking powder, salt, and cinnamon. Stir until evenly mixed, then fold in the chocolate chips.
Divide the batter evenly among the 6 prepared muffin cups, filling them almost to the top. Sprinkle with a few extra chocolate chips if desired.
Bake for 20–25 minutes, or until the oatmeal cups are set and lightly golden. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
This recipe makes 6 oatmeal cups and can easily be doubled.
Use honey or maple syrup according to your preference.
Extra chocolate chips can be sprinkled on top before baking.
Store the oatmeal cups in an airtight container for up to 5 days.
