Moist and fluffy banana protein muffins made with whole wheat flour, Greek yogurt, ripe bananas, and protein powder. A satisfying breakfast or protein-packed snack with optional walnuts or chocolate chips.

Ingredients

  • 1 3/4 cups whole wheat flour
  • 1/3 cup protein powder of choice
  • 1/2 cup packed brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 1/2 cups mashed very ripe bananas
  • 1/2 cup Greek yogurt
  • 2 large eggs
  • 1/3 cup extra-virgin olive oil
  • 2 teaspoons vanilla extract
  • 2/3 cup chopped walnuts or chocolate chips, plus more for topping (optional)

Instructions

  1. Preheat the oven to 350°F. Line a standard 12-cup muffin pan with paper liners.
  2. In a medium bowl, whisk together the whole wheat flour, protein powder, brown sugar, baking soda, and kosher salt.
  3. In a separate medium bowl, whisk together the mashed bananas, Greek yogurt, eggs, olive oil, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir just until combined.
  5. Stir in the chopped walnuts or chocolate chips, if using.
  6. Divide the batter evenly among the muffin cups, filling each about 3/4 full. Top with additional chopped walnuts or chocolate chips, if desired.
  7. Bake for 18 to 22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Remove from the oven and allow the muffins to cool in the pan for 10 minutes before serving.

Notes

  • Use very ripe bananas for the best natural sweetness and banana flavor.
  • Walnuts and chocolate chips are optional and can be omitted.
  • Avoid overmixing the batter to help keep the muffins tender and fluffy.
  • Store cooled muffins in an airtight container for up to 3 days, or freeze for longer storage.
