Barley and Lentil Soup

A hearty and comforting barley and lentil soup packed with tender vegetables, mushrooms, beans, and savory herbs. This wholesome one-pot soup is filling enough for a satisfying meal.

Ingredients

  • 1 medium onion, chopped
  • 3 medium carrots, chopped
  • 2 celery stalks, chopped
  • 1 clove garlic, minced
  • 8 oz baby bella mushrooms, chopped
  • 1 tbsp tomato paste
  • 1 14 oz can diced tomatoes
  • 8 cups chicken or vegetable broth
  • 1/2 cup lentils
  • 1/2 cup barley
  • 1 14 oz can cannellini beans
  • 2 tbsp olive oil
  • 2 bay leaves
  • 1/2 tbsp dried thyme
  • salt

Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Add the onion, celery, and carrots and cook for 3-4 minutes, stirring occasionally. Season with a pinch of salt.
  2. Continue cooking until the onions are slightly translucent, about 6-8 minutes. Stir in the mushrooms and saute for about 3 minutes.
  3. Add the garlic and saute for 2 minutes. Make space in the center of the pot and add the tomato paste. Spread it over the surface of the pot and let it caramelize for 2 minutes, then stir it into the vegetables.
  4. Pour in the diced tomatoes and bring to a simmer. Cook for 5 minutes, then stir in the thyme and another small pinch of salt.
  5. Pour in the broth and bring the soup to a boil. Reduce the heat to a simmer and add the bay leaves. Partially cover the pot, leaving space for steam to escape, and simmer for 25 minutes.
  6. Add the barley, lentils, and cannellini beans. Return to a simmer and cook for another 25 minutes, or until the barley and lentils are tender.
  7. Remove the pot from the heat and discard the bay leaves. Taste and adjust the salt as needed, then serve warm.

Notes

  • Vegetable broth can be used to keep the soup vegetarian.
  • Seasoning with small amounts of salt throughout cooking helps build flavor.
  • If the soup becomes thicker than desired, stir in additional broth or water before serving.
  • Store leftovers in an airtight container in the refrigerator and reheat gently before serving.
