A rich and creamy chicken carbonara featuring savory beef strips, tender chicken, and pasta tossed in a velvety parmesan sauce. This comforting dish is quick to make and perfect for a hearty dinner.

Ingredients

  • 3 large eggs
  • 3/4 cup grated parmesan cheese, plus more for serving
  • 1/2 cup heavy cream
  • 1 teaspoon black pepper, plus more to taste
  • 4 slices beef bacon, diced
  • 1 lb skinless, boneless chicken breasts, sliced into 1/2-inch strips
  • 1 teaspoon kosher salt, plus more for pasta water
  • 2 garlic cloves, minced
  • 12 oz fettuccine or linguine
  • 1/2 cup frozen peas
  • Chopped fresh parsley, for garnish

Instructions

  1. In a medium bowl, whisk together the eggs, parmesan cheese, heavy cream, and 1/2 teaspoon black pepper. Set aside.
  2. Cook the diced beef bacon in a large skillet over medium heat until crispy, about 5 to 7 minutes. Transfer to a paper towel-lined plate using a slotted spoon.
  3. Increase heat to medium-high. Add the chicken to the skillet with the drippings, season with salt and remaining pepper, and cook until browned and cooked through, about 6 to 8 minutes. Add garlic in the last minute of cooking. Transfer chicken to a plate.
  4. Bring a large pot of salted water to a boil. Cook pasta according to package instructions, adding peas in the last minute. Reserve 1 cup pasta water, then drain.
  5. Add hot pasta and peas to the skillet off heat. Pour in the egg mixture and toss quickly, adding 2 to 3 tablespoons reserved pasta water until a creamy sauce forms. Adjust consistency with more water if needed or gently heat if too thin.
  6. Stir in the cooked beef bacon and chicken. Garnish with parsley, extra parmesan, and black pepper before serving.
