A hearty, comforting lentil soup with tender vegetables, warming spices, tomatoes, and leafy greens, brightened with fresh lemon.

Ingredients

  • 1/4 cup extra-virgin olive oil
  • 1 medium yellow or white onion, chopped
  • 2 carrots, peeled and chopped
  • 4 garlic cloves, pressed or minced
  • 2 teaspoons ground cumin
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground turmeric
  • 1 large can (28 ounces) diced tomatoes, lightly drained
  • 1 cup brown or green lentils, picked over and rinsed
  • 4 cups vegetable broth
  • 2 cups water
  • 1 teaspoon salt, plus more to taste
  • Pinch of red pepper flakes
  • Freshly ground black pepper, to taste
  • 1 cup chopped fresh collard greens or kale, tough ribs removed
  • 1 to 2 tablespoons lemon juice, to taste

Instructions

  1. Warm the olive oil in a large pot over medium heat. Add the onion and carrot and cook, stirring often, until the onion is softened and translucent.
  2. Add the garlic, cumin, thyme, and turmeric. Cook until fragrant, stirring constantly.
  3. Add the diced tomatoes and cook for a few minutes, stirring often.
  4. Add the lentils, vegetable broth, and water. Season with salt, red pepper flakes, and black pepper.
  5. Bring the mixture to a boil, then partially cover the pot, reduce the heat, and simmer until the lentils are tender.
  6. Transfer about 2 cups of the soup to a blender and carefully purée until smooth. Return the puréed soup to the pot and stir to combine.
  7. Add the chopped greens and cook until softened to your liking.
  8. Remove from the heat and stir in lemon juice. Taste and adjust the salt, pepper, red pepper flakes, or lemon juice before serving.

Notes

  • Brown or green lentils work well because they retain some texture after cooking.
  • For a smoother, thicker soup, blend a slightly larger portion of the cooked soup.
  • Use kale or collard greens according to preference and cook until tender.
  • Store leftovers covered in the refrigerator and reheat gently before serving.
