Oven Baked Salmon

A healthy and flavorful dish with fresh ingredients and a balanced combination of flavors.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 tablespoon olive oil
  • 1/2 cup diced cucumber
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Rinse quinoa under cold water to remove excess starch.
  2. In a medium pot, combine quinoa and water. Bring to a boil, then reduce heat and simmer for 15 minutes, or until water is absorbed and quinoa is tender.
  3. Fluff quinoa with a fork and allow to cool for 10 minutes.
  4. In a large bowl, combine quinoa, cucumber, red bell pepper, red onion, and parsley.
  5. In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper.
  6. Pour dressing over quinoa mixture and toss to combine. Serve chilled or at room temperature.

Notes

  • Substitute quinoa with couscous for a different texture.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
  • For extra protein, add chickpeas or grilled chicken.
