These pumpkin muffins are soft, moist, warmly spiced, and packed with rich pumpkin flavor. Add your favorite chocolate chips, nuts, or dried fruit for an easy fall treat.
Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius).
Grease a standard 12-cup muffin tin and set aside.
Combine the flour, pumpkin pie spice, cinnamon, baking powder, and sea salt in a small bowl. Set aside.
Whisk the pumpkin puree and melted butter together in a large bowl until smooth.
Add the brown sugar and granulated sugar and whisk until well combined and the sugars are dissolved.
Whisk in the eggs and vanilla extract.
Add the dry ingredient mixture and whisk or stir just until the batter is smooth and combined.
If desired, fold in chocolate chips, cinnamon chips, walnuts, dried fruit, or other mix-ins until evenly distributed.
Pour about ¼ cup of batter into each prepared muffin cup and smooth the tops.
Bake for 20-25 minutes, or until the tops are set and a cake tester or toothpick inserted into the center comes out clean or with a few moist crumbs.
Let the muffins cool in the pan on a wire rack for 10 minutes, then transfer them to the wire rack to cool completely.
Notes
Use up to 1 cup of optional mix-ins such as chocolate chips, cinnamon chips, walnuts, other nuts, or dried fruit.
At high altitude, the muffins may require less baking time. At approximately 5,000 feet above sea level, begin checking them after 15 minutes; they may be ready in 15-18 minutes.
A toothpick or cake tester inserted into the center should come out clean or with only a few moist crumbs when the muffins are done.
